Before that, I wanted to drop something into your inboxes that’s been bugging me this week. Supermarket veg prices at Christmas have become a war, and I wanted to drop my thoughts into the equation (those short social posts I don’t think give quite enough room for something so nuanced to breathe) so i hope this gets you thinking.
Even if you don’t celebrate Christmas it’s a rooty veg season so I’m sharing a kugel recipe that will use up all your veg odds and ends - you can follow the recipe exact or use up what you’ve got; that’s the beauty of this.

This week, in a local WhatsApp group an image was shared. “Cheap Christmas Veg’ was listed by supermarket and by the dates it was available. Some proudly touting British, some unmarked. A kilo of carrots for as low as 8p (and as high as 15p!), 500g sprouts oscillating between 8-15p…

Veggie Kugel
A great way to use up your leftover roots.

A dish that can be reheated a few times and serves as a great base for eggs at lunch as well as a side at dinner. The carrots and potatoes can easily be swapped out for other root veg, if you swap the courgettes you may need an extra tbsp of olive oil to help the dish bind.
