Peach and Sumac Overnight Oats
Lemony, spicy, sweet.

Using savoury spices in sweet dishes is one of my favourite things – choose the right spice and you’ll get a lift you didn’t expect. Sumac is a zesty spice made from ground red berries and used extensively in north African and Mediterranean dishes. It’s fantastic on savoury dishes but here it brings a lemony brightness to stone fruits which are at their best right now. Thank you to Organiclea Community Growers for the beautiful peaches on show.
Ingredients
60g whole oats
120ml coconut milk
½ tsp vanilla paste or essence
¼ tsp sumac
10g mixed seeds – I’ve used poppy seeds and pumpkin seeds
1 peach, cubed (with some slices reserved for topping)
50g greek or coconut yoghurt
Method
Mix the oats with the coconut milk, vanilla paste and sumac in a jar
Add the seeds, then fold through the cubed fruit gently
Leave for 30 minutes whilst the oats begin to absorb the coconut milk, then top with Greek yoghurt, slices of peach and a further sprinkle of sumac
