Carrot Cake Overnight Oats

An easy, speedy breakfast to use up those carrots.

I make this on retreat and find it is the perfect recipe to use up leftover carrots and sweet spices we haven’t quite finished. It’s delicious, super, simple and feels like dessert at 8am.

Ingredients

Serves 2

  • 100g oats

  • 120ml milk (your preference)

  • 180ml water

  • 1 carrot, peeled & grated

  • 1 tsp ground cinnamon

  • ½ tsp fresh ginger, grated

  • 2 tbsp dried mixed dried fruit (your choice!)

  • Zest of half a small orange

  • ¼ tsp grated nutmeg

  • Pinch of salt

  • 1 tbsp maple syrup or honey

  • A sprinkle of coconut flakes and a few berries for serving

Method

  1. The easiest breakfast you’ll ever make. Prepare the ingredients as above, then mix everything together in a jar apart from the toppings

  2. Twist the lid tight, then leave in the fridge overnight for the magic to happen

  3. The next day add your toppings and enjoy.

Get creative with your spices; cardamom, vanilla and fennel seeds will all work beautifully here too; and prepared in a jar you can take this with you wherever the day takes you.
