A Juice for Spring
Green and fresh, you'll want to batch this and have it every morning.

A juice that captures the essence of Spring.
A glorious green juice! If you don’t have a juicer, you can chop the ingredients finely, pop them in a blender then strain through a muslin or a sieve.
Ingredients
Makes 400ml
30g fresh ginger
100g young spinach leaves
1 medium fennel bulb
2 green apples
25g parsley
10 lemon balm leaves (if you don’t have these, you can swap for 1 unwaxed lemon - the flavour will be sharper and less herbaceous)
Method
Juice all of the ingredients, skins and all. There is goodness in the whole of fruits and veggies and when we juice we can make use of the more fibrous parts easily
When finished, serve immediately over ice.
You can keep this in the fridge for 48 hours - just shake to bring it back together.
